A Syrah of this calibre calls for dishes with substance and aromatic depth. It pairs particularly well with a medium-rare beef fillet with morel sauce or a slowly braised leg of lamb with rosemary and potato gratin. Saddle of venison with juniper jus, porcini risotto or mature hard cheese also offer delightful combinations. The wine’s spicy fruit and robust structure harmonise particularly well with toasty notes, dark sauces and Mediterranean herbs.
A nose long familiar to wine lovers: the label of Diego Mathier’s Syrah reflects the winemaker’s distinctive profile and highlights the intuition with which he has shaped the fortunes of the family estate in Salgesch for decades. For Diego Mathier, a great wine begins long before vinification – with meticulous work in the vineyard, the right timing for the harvest and the ability to recognise a grape’s potential. The Syrah Réserve 2022 continues this personal story. As a special interpretation of his own Syrah, it embodies the ambition to give a great Valais red wine even more scope to unfold. The Réserve thus bears not only his name and his image, but also his vision of quality: uncompromising in its standards, unmistakable in its character.
In the glass, the Diego Mathier Syrah Réserve 2022 presents itself in an intense dark red with almost black highlights. The bouquet promises a complex array of aromas of blackberries, black cherries and ripe wild berries, accompanied by violets, black pepper and subtle toasted notes. On the palate, the Réserve is concentrated and full-bodied, with ripe tannins, a spicy structure and a long, complex finish.
For the Syrah Diego Mathier, the destemmed grapes are fermented at controlled temperatures in Vinimatics and then aged for more than 18 months in new barriques.
The grapes for the Syrah Diego Mathier come from sun-drenched, warm Valais terraced vineyards, which promote optimal ripening of the late-ripening Syrah grape.
