Syrah La Folie is an excellent accompaniment to lamb, beef, game and cheese dishes. An ideal pairing would be a juicy beef entrecôte in a rich tomato sauce, accompanied by an aromatic risotto with herbs and mushrooms.

Syrah produces a powerful, intensely coloured red wine with deep black reflections. When enjoyed young, it is rough and tart on the palate. With age, it develops a spicy aroma composition of violets and reseda, which gradually transform into notes of pepper and game.
Strict yield restriction of 500–600 grams of grapes per square metre. The wine is aged for 30 months in new barriques.
The grapes come from 40-year-old vines in the best terraced location with calcareous soils from the Champs Marais in Conthey.
