This Pinot Noir is an excellent accompaniment to Valais specialities such as dried meat and raclette. It also goes well with veal medallions, poultry, game birds or mushroom risotto. It is also an ideal accompaniment to mild hard cheeses and Mediterranean vegetable dishes.
The Cave de l'Hospice de Salquenen is listed as the producer on the wine label. The wine label pays homage to Diego Mathier's grandfather, Oskar Mathier-Oggier.
The coat of arms of Salgesch still bears the Maltese cross – a symbol of the village's centuries-old wine tradition. As early as 1325, the Knights Hospitaller settled in the village and founded the Hospice de Salquenen, a hostel for pilgrims and travellers. Even then, wine was a central part of monastic life – as a cultural asset, a luxury food and an expression of deep connection to the terroir.
With the Cave de l'Hospice de Salquenen, the Adrian & Diego Mathier winery continues this historical spirit – with wines that not only show their origin, but also their attitude. The new estate produces wines full of character that deliberately take a different path: more straightforward, more spirited, more grounded.
The Pinot Noir de Salquenen Hospice de Salquenen displays a brilliant ruby red colour in the glass. The nose reveals aromas of red berries, cherries and delicate floral notes, underpinned by a hint of spice. On the palate, it is elegant and harmonious, with soft tannins, fresh acidity and a long, fruity finish.
