Aperitif, starters, sea fish and shellfish, poultry and rabbit meat and hard cheese. Particularly delicious with gilthead bream cooked in the oven with a sprig of thyme and lemon wedge.
The name of this ancient Valais grape comes from Latin, so it is not only thought to have originated in Roman times, but that it also found its way to Valais thanks to the legendary Roman emperor Julius Caesar. He sent his army to conquer Valais so that the connection between Rome and Avenches would be guaranteed forever.
However, Caesar's legionaries not only brought war and misery to the Rhone Valley, they also benefited from the beginnings of civilisation, such as reading and writing, as well as the fruit trees and vines they brought with them.
The wine's complex flavours are reminiscent of ripe fruit, dominated by stewed rhubarb and grapefruit. A balanced, complex structure develops on the palate with a beautiful, ripe acidity and the typical salty finish.
