The term Oeil-de-Perdrix is used throughout Switzerland for rosé wines that are mainly made from Pinot Noir grapes. The term originally comes from Neuchâtel. Oeil-de-Perdrix translates as partridge's eye because its colour, like the wine, is said to be pink with a strong shimmer.
The wooden mask, La Matze in French, symbolises an ancient Valais custom. In the past, when the bishop was also the secular ruler, this mask, which can be seen on the label of the Oeil-de-Perdrix La Matze, was used as a memorial.
When their frustration with the bishop's machinations became unbearable, the people would pick up this wooden mask, which stood in every village centre, and march to the cantonal capital of Valais full of energy. And every citizen they met on the way there, who also had a reason to express their displeasure, hammered a nail into the mask and joined the march to Sion.
The number of nails expressed the displeasure of the villagers and at the same time the power of the brave. If you keep your eyes peeled in Salgesch, you can still find this mask today, hidden in a side alley, and take a look at it. The pot with the nails and the hammer can still be found next to the mask.
The Oeil-de-Perdrix is a dry rosé wine with a varied bouquet of red berries, peach, bonbon anglaise and strawberries. With its beautiful acidity, elegant and full-bodied, it is dry on the palate and perfectly combines the charm and freshness of a white wine with the structure of a red wine.
The wine is drawn off early from the mash of the Pinot Noir Lucifer, also known as ‘Tête de Cuvée’. This top-quality juice is then matured to perfection in neutral-flavoured stainless steel tanks.
