This Pinot Noir is dedicated to Diego Mathier's grandfather, Oskar Mathier, in recognition of his life's work for future generations.
Not only did he cellar his first 12,000 litres of Valais wine where today's Restaurant Barrique stands. He later built what was then a modern winery next to the current winery, which is still used today as a grape reception centre. With his vision and his work, he had a decisive influence on the development of the Mathier winery in a very individual way.
The fingerprint on the wine label of the Pinot Noir Non Filtre symbolises this individuality and thus also corresponds to this Pinot Noir. It is bottled unfiltered and without ageing in barriques so that it can fully express its Salgesch terroir in an unmistakable way. A multi-award-winning, noble Pinot Noir from Salgesch.
Beautiful, intense strawberry red in the glass with a spicy nose of ripe cherries and cassis. The fermentation flavours are still very present. In the mouth with a fruity attack and fine tannins that develop pleasantly on the palate. All in all, the non-filtered wine is harmonious and balanced, with the fruit of the Pinot Noir fully coming to the fore. Lovers of wines that can be enjoyed young will have a lot of fun with this wine, as it can be savoured after one to two years.
Multiple soutirage (four to five times) instead of filtration, natural clarification through repeated racking. No stressful pressing techniques - vinification just like in our grandfather's day. A natural deposit can form on the bottom of the bottle.
The way in which the wines of the Pinot Noir grape reflect the terroir on which they grow is unrivalled among grape varieties. It is not for nothing that Pinot Noir is also known as the king of red wines. Even the most expensive wines in the world are made from Pinot Noir grapes. The best Pinot Noir wines grow on calcareous soils, and this also applies to this Pinot Noir from Mathier, which is grown on the best sites in Salgesch on barren soils that are very rich in limestone and magnesium.
