Perfect with freshwater fish, crustaceans and shellfish and mountain cheese. In Valais, we like to serve our Heida with vineyard snails and a strong herb butter sauce.
Archaeological finds prove that the Celts cultivated Heida in Valais even before Christianisation. They chose a particularly exposed vineyard site near today's Visperterminen, which is recognised in Europe as the highest vineyard north of the main Alpine ridge.
The harsh climate at 1150 metres above sea level is just right for the precocious grape. However, if you are looking for a full, broad structure with a nice acidity, it is important to grow the grape variety in different locations. The Heida Les Pyramides from Mathier, for example, thrives on steep slopes at around 750 metres above sea level in Turtmann and Venthône.
Fruity on the nose, with notes of apricot and peach. On the palate, the Heida is full-bodied with discreet, well-integrated toasted notes. The finish is long-lasting, accompanied by light, elegant tannins.
Destemmed, directly pressed grapes. First fermentation mainly in new barriques. We limit the second fermentation to a certain number of barriques. After maturing for 9 months in French barriques, the Heida is ready to enjoy.
