The Fendant du Ravin is a Valais white wine that is excellent as an aperitif, with various Valais cheese specialities or with freshwater fish dishes. It is a speciality with brook trout gently steamed in vegetable stock, refined with verjus and served with crunchy seasonal garden vegetables.
Alongside the red Dôle, Fendant is the best-known Swiss wine. While the grape and wine are known as Chasselas in French-speaking Switzerland, it is called Fendant in Valais and Chasselas in Germany.
The French word Ravin means gorge. And this gorge, which can also be seen on the label of our Fendant du Ravin, has something to do with it. A proud Valais knight is said to have fought bravely against Napoleon's overpowering armies in the Battle of Pfyn at the end of the 18th century.
Although the resistance fell victim to the enemy, the proud knight on his horse was able to save not only himself but also the Valais virtues with a daring leap across the gorge of the Dala mountain stream. Symbolically, the Fendant has also preserved the tradition of Valais wines and successfully defended itself against foreign powers.
And so this wine presents itself like the daring knight: proud, determined and with Valaisan characteristics.

The Fendant undergoes traditional winemaking. The blend of Chasselas from the classic growing regions of Valais undergoes alcoholic fermentation with partial malolactic fermentation in stainless steel tanks.
