Two wines in the family line are dedicated to Adrian Mathier - Diego Mathier's father. In addition to the Cornalin, the Cabernet Sauvignon also bears his name. As a doer who was not above any activity during his active time as a winemaker, he created and achieved an incredible amount in his life, primarily through hard physical labour. He worked all his life and made such a decisive contribution that the wine shop can still present itself in its best light today.

Tasting note

Promising dark colour with a violet shimmer in the glass. A generous and varied bouquet, from spicy to fruity to a subtle vanilla note. On the palate, the Cabernet Sauvignon is full-bodied and powerful. Initially still characterised by tannins and a woody note, the body gradually transforms into a balanced and excellently rounded taste experience during ageing.

Vinification

Destemmed grapes. Long fermentation in Vinimatics to extract more tannins and colour. Optimum temperature control. Matured for 15 to 18 months in new barrique barrels.
