The idea for this wine was born one evening with representatives of the upmarket catering trade from Zermatt and Saas-Fee. The initiators are still immortalised on the label today. If you turn it upside down, it shows the Matterhorn; if you turn it further, the Allalin, Saas-Fee's local mountain, appears. And the mystical female figure symbolises the wife and five daughters in Diego Mathier's life.

The crazy wine creation from Mathier was launched one evening in a cosy get-together with representatives from the upmarket gastronomy scene in Zermatt and Saas-Fee. The name Folissimo is derived from the French word la Folie = craziness. A crazy creation of Cabernet Sauvignon and Merlot for special moments of pleasure.

Tasting note

Intense garnet red colour with violet reflections. Intense complexity on the nose with a spicy, racy note of liquorice, tobacco and black fruit. Wild and sensual, the masculinity of Cabernet Sauvignon and the velvety tannins of Merlot mingle on the palate.

Lots of charm, harmony, density, potential and power, with a long finish that can hold its own with the best wines in the world, even when compared internationally. The quality of the tannins, the long ageing in barrique barrels and the beautiful harmony give this blend a long shelf life.

Vinification

Maceration, extraction and alcoholic fermentation in Vinimatics. Long second fermentation in new French oak barrels. Maturation of the single-varietal wines for 24 months in these barrels. The blended wines mature for a further 12 months in new oak barrels.
