Beef and lamb, game and cheese. Excellent harmony with a braised beef stew, accompanied by corn polenta and marinated tomatoes.
The Merlot grape variety is the second most common variety in the world of wine after Cabernet Sauvignon. The Merlot grape variety originated in the French wine-growing region of Bordeaux. The Merlot grape variety takes its name from the little bird Merle (‘the blackbird’), which favours this grape.
The Merlot was dedicated to Nadia Mathier within the family line. The label of this red wine is adorned with a heart as a symbol of the centre of our being, the seat of the soul and the central symbol of love and life. It was precisely this love that brought Nadia to Salgesch at a young age to be with Diego, and from which five enchanting daughters were born. Nadia not only puts her heart and soul into being a wife and mother on a daily basis - she also looks after the business and the well-being of visitors to our wine cellar with great warmth.
The Merlot is bordeaux red in colour. Thanks to the in-house imposed yield restriction - see vinification - the wine has a respectable, concentrated bouquet, which is characterised by aromas such as ripe fruit, spices and elderberry. A hint of oak bark is reminiscent of the extended ageing in barriques, without detracting from the characteristics of the variety. The velvety tannins are already well integrated and the Merlot has a long-lasting, rounded finish.
Strict yield limit of 600 grams per square metre. Destemmed grape harvest. Fermentation of the wines in Vinimatics ensures optimum temperature control. The wine is then aged for 15 to 18 months in new barrique barrels.
