This wine, characterised by its fullness, structure and fine sophistication, is the ideal accompaniment to braised dishes, a tender rack of lamb from the oven or an aromatic, mature blue cheese. It also has excellent ageing potential, allowing it to develop further over the years and gain complexity.
In the heart of Valais, where sun and stone work in perfect harmony, where the Rhone wind caresses the vines and the sun-drenched terraces allow the soil to unfold its full potential, a wine of exceptional calibre is created: the Cuvée Diego Mathier, known as Der Grandseigneur. It appears like a true gentleman – proud, charming and deeply cosmopolitan. Power and finesse combine in its character, characterised by dark berries, fine pepper and the noble maturity of fine barriques. No loud entrance – rather a velvety statement that respectfully embodies the soul of the Valais.
A deep ruby red with violet reflections and impressive colour intensity already hints at the concentration of this wine. The bouquet is complex and expressive: dark, cooked fruits such as blackberries and blackcurrants, accompanied by subtle hints of figs and dates. Toasted aromas, delicate vanilla, a hint of smoke and spicy notes of black pepper, liquorice and cloves – typical of Syrah and ageing in wood – round off the bouquet.
On the palate, the wine is full-bodied and soft, with rich substance. The tannins are noticeable but harmoniously integrated, giving the wine structure without austerity. Merlot gives the cuvée soft curves, while Cabernet Sauvignon provides clear lines and freshness. Syrah adds depth and spicy accents. The natural residual sweetness of the dried grapes gives the wine an almost flattering fullness, which is perfectly balanced by a fine acidity and lingers in a long, elegant finish.
Careful selection of the best plots and rigorous selection of grapes in the vineyard. Vinification takes place in stainless steel tanks, followed by 16 months of ageing in French oak barrels. Some of the grapes are gently dried to give the cuvée additional depth, expressiveness and character.
