Lamb and beef, game and aged cheese. Delicious with a kidney of lamb in a port wine sauce with glazed chestnuts.
The Cornalin grape - also known as Landroter - is very demanding in the vineyard, which in the mid-20th century, as a result of the European phylloxera crisis, meant that it was almost no longer cultivated in Valais, indeed in the whole of Switzerland. However, thanks to the high quality and incomparable character of this typical and oldest Valais wine speciality, the grape variety has experienced a veritable renaissance in recent decades.
Elaborate vineyard and pressing work is part of the life of Adrian Mathier, Diego Mathier's father. His hands on the label are not only a reminder that Cornalin is very labour-intensive and yet unpredictable. They also symbolise the fact that Adrian has always been a doer as a winemaker. He has created and achieved an incredible amount in his life, primarily through physical labour. He is a person who has worked all his life and has thus significantly shaped the Mathier winery.
In the glass, the Cornalin has a beautiful garnet-red colour with cherry-red reflections. The bouquet is open-hearted and floral with accents of wild berries and acacia blossom. The palate is supple and warm with a fruity character and a hint of liquorice. The well-integrated tannins are complemented by the wine's distinctive yet refined character.
Destemmed grape harvest. Monitored alcohol fermentation in Vinimatics. In order to preserve the delicate flavours of the Cornalin in the foreground, it is matured partly in stainless steel tanks and partly in barriques for 15 to 18 months.
