Refines dishes with freshwater fish such as perch fillet, but is also an excellent accompaniment to various cheese dishes such as raclette and fondue. And of course there is no way around it as an aperitif wine.

Wine history

The first thing that strikes every wine lover when looking at the Molignon bottle is the striking lettering. Created by an artist, it is a tribute to Diego Mathier's grandfather, Oskar Mathier.

Above it hangs the bell at the top left. It symbolises the oldest friend of the Valais, the foehn wind. It is a constant companion in Valais and its gentle breeze caresses the grapes incessantly. This caressing promotes the formation of sugar in the must. When the bells ring in the fertility chapel in Molignon, it is an unmistakable sign that another excellent vintage is ripening.

Tasting note

Brilliant colour with golden reflections in the glass. With a mineral note and elegant acidity, the Fendant Molignon is very balanced, fruity and dry on the palate.

Vinification

The sun-kissed harvest is characterised by a high volume and restrained acidity. Alcoholic fermentation with acid reduction takes place traditionally in stainless steel tanks.
